Blueberry Ice cream Shortcake is my new summertime treat. As you may have notice, I have a weakness for ice cream or sweets in general.

Wow! As a kid, Mary Tyler Moore was always my television sitcom crush. LOL

If you grew up watching this television show, she always was able to put a smile on your face. The Mary Tyler Show was one of my favorite T.V. shows that I watched as a kid.

There are three recipes that you will need to make this Blueberry Ice Cream ShortCake summertime treat.

You will need to make the shortcake, blueberry sauce, and ice cream for this recipe.

Shortcake Recipe

  • A 1 1/2 C cake flour (if you don’t have cake flour you can substitute cornstarch)
  • 1 Cup AP flour (2 Tablespoons AP flour + 2 Tablespoons cornstarch or arrowroot = 1 cup cake flour)
  • 1 1/2 teaspoon Baking Powder
  • 1/2 teaspoon of Salt
  • 1/2 Cup Unsalted Butter (room temp)
  • 1 Cup Sugar
  • 2 Eggs (room temp)
  • 1 teaspoon vanilla extract
  • 3/4 Cup buttermilk (room temp)

Blueberry Sauce

  • 2 Cup of blueberries
  • 1/2 Cup of water
  • 1/2 Cup of Sugar
  • Juice of a Lemon
  • 2 Tablespoons of Cornstarch, mixed with water
  • Whipped Cream 1 Cup heavy whipping cream 2 Tablespoons of Sugar

Blueberry Ice Cream

  • 2 Cup Blueberries
  • 1 Cup of Sugar
  • Juice of 1 lemon
  • 2 Cup Heavy Cream
  • 1 Cup milk
  • 1/4 teaspoon of salt
  • 3 Egg Yolks
  • 1/2 teaspoon Vanilla Extract

I love making homemade ice cream. I love the texture and all of the natural flavors that this blueberry recipe has in its mixture.

Once you have all your blueberry ice cream ingredients, you can just mix all these in a bowl or in an ice cream maker machine.

If you are on a budget, you can literally make this in 5 minutes.  Just mix all of your ingredients together and watch the video below.
